Spaghetti with a Meat Sauce
So tonight I was feeling like spaghetti. I was going to stay late at the office, but went home around 7pm. This sauce is super super easy.
Ingredients
1 lb Ground Turkey (dark and white meat)
1 small onion diced
3 Garlic Cloves rough chopped
2 Tbls Olive Oil
1 (15 ounce) can diced tomatoes
1 (15 ounce) can tomato sauce
1 (6 ounce) can tomato paste
1 1/2 tablespoons sugar (please adjust to your taste)
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon fennel seeds
1 teaspoon crushed red pepper flakes (please adjust to your taste)
Salt and Pepper to tasteHeat olive oil in medium sized pot, add chopped onions and sauté for a few minutes. Add chopped garlic and continue to cook for another minute. Make sure not to burn the garlic. I like to season as I go along, a couple grinds of pepper and about 2 pinches of salt.
Next, add ground turkey and cook, crumbling the meat as it cooks. Next throw in the tomatoes, sauce and paste along with the dried herbs and the sugar. The sugar will help with the acidity of the tomatoes – it actually does help the flavor. Simmer this until the diced tomatoes have completely broken down, about 20-25 minutes.
Check for seasoning and adjust as necessary. I like bold tastes so I might add more red pepper flakes.
Cook your favorite pasta (I like Barilla’s Thick spaghetti) and then serve pasta with sauce on top.
This also goes GREAT with added sliced cremini or brown mushrooms…YUM!! Great with some Pinot or even a nice cold glass of sparkling water with a twist of lime…
